Other things to do

I expect Tracy will already have reams of suggestions for cultural and historical stuff to see.
So here's a thread for other non-climbing bits and pieces.
I've got a copy of this book
http://www.amazon.co.uk/Canyoning-Classic-Canyons-France-Cicerone/dp/1852845082
which includes no fewer than 5 different routes around Cala Gonone, from easy bimble to minor expedition.
Anything else?

You could try scuba diving!!!!
I am seriously tempted to sneak off for just a single day diving on my 'rest day'

One of the canyon routes mentions an optional via ferrata finish. But goes on to say that the author failed to find it!

It's not a holiday without a medieval castle

There's some more useful-looking info on biking (and walking and climbing) at

I've printed off some interesting stuff about Sardinian food, drink and where to find both
I'll bring them along.
