The Picos are very definitely winter climbing until about May - I've go9t a very tempting book that I got cheap in a sale - all looks very Scottish (ie if you book a winter climbing holiday there then it'll all melt the day before you arrive). Anyway, I digress. Here are some random thoughts.
Dates - March rather than April for me. The same for Carmen as her holiday year end is March.
Or would it be too radical to suggest October?!? Seas would be warm
Venue - I like the sound of Turkey (how much hassle is getting a visa Tracy?) but can't think of anywhere I wouldn't go. I've got a Montserrat guidebook and it looks great, a work colleague went for 4 days once and said he thought it might be a bit same-y for a week but there's probably other stuff nearby. We've not done the main Costa Blanca area for a few years, I think most people have yet to go there?
Dry weather - south of Spain is possibly safest but when we got snowed on at Morata, and showered on in Granada, they had major downpours and flooding in Alicante!
